# Steps:
01 - Preheat oven to 350°F and grease a 9x13-inch baking pan.
02 - Whisk together flour, baking powder, cinnamon, and salt in a bowl.
03 - Using a stand mixer, beat egg whites on high speed until soft peaks form; gradually add half the sugar and continue beating until stiff peaks form.
04 - In a separate bowl, beat egg yolks with remaining sugar until thick and pale then incorporate milk and vanilla extract.
05 - Gently fold flour mixture into egg yolk mixture, then carefully fold in whipped egg whites until just combined.
06 - Pour batter into prepared pan, smooth the surface, and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
07 - Let cake cool for 10 minutes, then poke holes evenly all over the surface using a fork or skewer.
08 - Whisk together horchata, sweetened condensed milk, evaporated milk, and cinnamon in a pitcher.
09 - Slowly pour milk mixture evenly over warm cake, allowing it to absorb; refrigerate for at least 2 hours or overnight.
10 - Combine sliced strawberries, granulated sugar, and lemon juice; macerate for 15 minutes to develop flavor.
11 - Beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
12 - Spread whipped cream evenly over chilled cake, top with macerated strawberries, drizzle with extra strawberry juices if desired, and serve cold.
