01 - 10.5 ounces orzo pasta
02 - 2 large eggs
03 - 2.1 ounces freshly grated Parmesan cheese
04 - 6.8 fluid ounces heavy cream (optional)

05 - 4.2 ounces pancetta or unsmoked bacon, diced

06 - 1 garlic clove, minced (optional)
07 - Freshly ground black pepper, to taste
08 - Fresh parsley, chopped (for garnish, optional)

# Steps:
01 - Bring a large pot of salted water to a boil. Cook orzo according to package directions until al dente. Reserve 5 fluid ounces of pasta water, then drain orzo.
02 - In a mixing bowl, whisk together eggs, grated Parmesan, heavy cream (if using), and a generous amount of freshly ground black pepper. Set aside.
03 - Heat a large skillet over medium heat. Add pancetta and cook until golden and crisp, about 5 minutes. Add garlic (if using) and sauté for 30 seconds. Remove skillet from heat.
04 - Add drained orzo into the skillet with the pancetta and toss thoroughly to combine.
05 - Immediately pour the egg and cheese mixture over the orzo, stirring quickly and continuously off the heat until the sauce becomes glossy and creamy. Gradually add reserved pasta water until the desired consistency is reached.
06 - Taste and adjust the seasoning with more freshly ground black pepper or salt if needed. Serve hot, garnished with additional Parmesan and chopped parsley if desired.
